FOR THE FISH & VEGETABLES:

Four 6- to 7-ounce center-cut fish fillets, such as cod, halibut, or bass (between 1¾ and 2 inches thick), patted dry

4 tablespoons olive oil

1¼ teaspoons kosher salt

1 tablespoon ground sumac

¾ pound asparagus, trimmed

1 lemon, thinly sliced

½ teaspoon freshly ground black pepper

FOR THE GARLICKY MAYO

(Makes 1½ cups):

1 large egg

1 tablespoon Dijon mustard

1 tablespoon freshly squeezed lemon juice

1 garlic clove

¾ teaspoon kosher salt

Pinch of cayenne pepper

¾ cup neutral oil, such as canola or sunflower

¼ cup olive oil
